Mexican Frittata
Apple-Cranberry Salad
Ingredients
- 1 Tbsp olive oil
- 1 (3-oz) pkg chopped green onions
- 8 large eggs
- ½ tsp salt
- ¼ tsp pepper
- ½ cup reduced-fat sour cream
- 1 (8-oz) pkg shredded sharp Cheddar cheese
- 1 (16-oz) container refrigerated salsa
- 2 avocados, sliced
Instructions
- Preheat oven to 425°F.
- Heat oil in a large nonstick, ovenproof skillet over medium heat.
- Add green onions, and cook 3 minutes or until tender.
- Beat eggs and 2 Tbsp water in a large bowl; season with salt and pepper.
- Add egg mixture to skillet; cook over medium heat about 10 minutes, lifting edges with a spatula to allow uncooked portion to flow underneath.
- Top with sour cream, and sprinkle with cheese.
- Transfer skillet to oven, and bake 10 minutes or until puffed and browned.
- Top with salsa and sliced avocado.
Side Dish Ingredients
- 1 (14-oz) pkg sliced red apples
- ½ cup sweetened dried cranberries
- ¼ cup fresh orange juice
- 1 Tbsp honey
- ¼ tsp ground cinnamon
Side Dish Instructions
- Coarsely chop apples; toss with cranberries in a serving bowl.
- Whisk together orange juice, honey and cinnamon.
- Pour over apple salad, and toss to coat.
