Mexican Frittata

Apple-Cranberry Salad

Ingredients

  • 1 Tbsp olive oil
  • 1 (3-oz) pkg chopped green onions
  • 8 large eggs
  • ½ tsp salt
  • ¼ tsp pepper
  • ½ cup reduced-fat sour cream
  • 1 (8-oz) pkg shredded sharp Cheddar cheese
  • 1 (16-oz) container refrigerated salsa
  • 2 avocados, sliced

Instructions

  1. Preheat oven to 425°F.
  2. Heat oil in a large nonstick, ovenproof skillet over medium heat.
  3. Add green onions, and cook 3 minutes or until tender.
  4. Beat eggs and 2 Tbsp water in a large bowl; season with salt and pepper.
  5. Add egg mixture to skillet; cook over medium heat about 10 minutes, lifting edges with a spatula to allow uncooked portion to flow underneath.
  6. Top with sour cream, and sprinkle with cheese.
  7. Transfer skillet to oven, and bake 10 minutes or until puffed and browned.
  8. Top with salsa and sliced avocado.

Side Dish Ingredients

  • 1 (14-oz) pkg sliced red apples
  • ½ cup sweetened dried cranberries
  • ¼ cup fresh orange juice
  • 1 Tbsp honey
  • ¼ tsp ground cinnamon

Side Dish Instructions

  1. Coarsely chop apples; toss with cranberries in a serving bowl.
  2. Whisk together orange juice, honey and cinnamon.
  3. Pour over apple salad, and toss to coat.
