Balsamic London Broil

Skillet Roasted Peas and Tomatoes with Blue Cheese

Ingredients

  • 1 onion, thinly sliced
  • 1 lb top round steak (London broil)
  • 2 Tbsp balsamic vinegar
  • 1 Tbsp low-sodium soy sauce
  • 1 Tbsp whole-grain mustard
  • 2 cloves garlic, minced
  • 1 tsp pepper
  • 2 sprigs fresh rosemary

Instructions

  1. Place onions in a 4-quart slow cooker. Top with steak, vinegar, soy sauce, mustard, garlic, pepper and rosemary.
  2. Cover and cook on LOW 6 to 8 hours or until steak is tender. Discard rosemary sprigs. Shred steak.
  3. Divide into 4 servings; serve 2 portions, and reserve 2 portions for a future meal.

Side Dish Ingredients

  • 1 cup chopped onion
  • 1 Tbsp olive oil
  • 2 cups frozen green peas
  • Pinch of crushed red pepper
  • ⅛ tsp salt
  • 2 tomatoes, sliced
  • 2 Tbsp crumbled reduced-fat blue cheese

Side Dish Instructions

  1. Sauté onion in hot oil in a large skillet over medium-high heat 4 minutes or until beginning to brown on edges.
  2. Stir in peas, red pepper and salt; cook 2 minutes or until tender.
  3. Divide peas and tomatoes between 2 serving plates; sprinkle tomatoes with cheese.
