Balsamic London Broil
Skillet Roasted Peas and Tomatoes with Blue Cheese
Ingredients
- 1 onion, thinly sliced
- 1 lb top round steak (London broil)
- 2 Tbsp balsamic vinegar
- 1 Tbsp low-sodium soy sauce
- 1 Tbsp whole-grain mustard
- 2 cloves garlic, minced
- 1 tsp pepper
- 2 sprigs fresh rosemary
Instructions
- Place onions in a 4-quart slow cooker. Top with steak, vinegar, soy sauce, mustard, garlic, pepper and rosemary.
- Cover and cook on LOW 6 to 8 hours or until steak is tender. Discard rosemary sprigs. Shred steak.
- Divide into 4 servings; serve 2 portions, and reserve 2 portions for a future meal.
Side Dish Ingredients
- 1 cup chopped onion
- 1 Tbsp olive oil
- 2 cups frozen green peas
- Pinch of crushed red pepper
- ⅛ tsp salt
- 2 tomatoes, sliced
- 2 Tbsp crumbled reduced-fat blue cheese
Side Dish Instructions
- Sauté onion in hot oil in a large skillet over medium-high heat 4 minutes or until beginning to brown on edges.
- Stir in peas, red pepper and salt; cook 2 minutes or until tender.
- Divide peas and tomatoes between 2 serving plates; sprinkle tomatoes with cheese.
