Beef, Broccoli, and Spinach Pasta Bake

Ingredients

  • ½ (16-oz) box ziti
  • ½ (1-lb) pkg ground beef
  • ½ cup chopped sweet onion
  • ½ (12-oz) pkg broccoli florets
  • 2 Tbsp all-purpose flour
  • 1 (14.5-oz) can chicken broth
  • 3 cups chopped baby spinach
  • 1½ cups shredded mozzarella cheese
  • ½ Tbsp Dijon mustard
  • ½ tsp salt
  • ½ tsp pepper

Instructions

  1. Preheat oven to 350°F.
  2. Cook pasta according to package directions; drain, and set aside.
  3. Cook ground beef and onion in a skillet over medium heat stirring until beef is browned and crumbly; drain, and return to skillet.
  4. Add broccoli; cook, stirring 1 minute.
  5. Add flour, and cook, stirring, 2 minutes.
  6. Gradually stir in broth and spinach; bring to a boil, reduce heat, and simmer 10 minutes or until slightly thickened.
  7. Stir in cheese.
  8. Add mustard, salt, pepper and reserved pasta; spoon into a greased 9-inch baking dish. Bake 20 minutes or until hot and bubbly.
