Unstuffed Cabbage Rolls
Parmesan Pasta
Ingredients
- 1 (20-oz) pkg ground turkey
- 1½ cups chopped onion
- 4 cloves garlic, minced
- 1 head cabbage, chopped
- 2 (14.5-oz) cans fire-roasted diced tomatoes
- 1 (15-oz) can no-salt-added tomato sauce
- 1 (10-oz) pkg matchstick-cut carrots
- 1 cup low-sodium chicken broth
- 1 tsp crushed red pepper
- ¼ tsp ground cinnamon
- 1 Tbsp fresh lemon juice
- 1 tsp honey
Instructions
- Cook ground turkey, onion and garlic in a large Dutch oven over medium heat, stirring until turkey is browned and crumbly.
- Stir in cabbage, tomatoes, tomato sauce, carrots, broth, red pepper and cinnamon.
- Bring to a boil, cover, reduce heat, and simmer 30 minutes, stirring occasionally, until cabbage is tender.
- Stir in lemon juice and honey.
Side Dish Ingredients
- 6 oz whole-grain rotini pasta
- 3 Tbsp extra virgin olive oil
- 3 Tbsp grated Parmesan cheese
- ½ tsp salt
Side Dish Instructions
- Cook pasta according to package directions. Drizzle with oil, and sprinkle with cheese and salt; toss.
