Unstuffed Cabbage Rolls

Ingredients

  • 1 (20-oz) pkg ground turkey
  • 1½ cups chopped onion
  • 4 cloves garlic, minced
  • 1 head cabbage, chopped
  • 2 (14.5-oz) cans fire-roasted diced tomatoes
  • 1 (15-oz) can no-salt-added tomato sauce
  • 1 (10-oz) pkg matchstick-cut carrots
  • 1 cup low-sodium chicken broth
  • 1 tsp crushed red pepper
  • ¼ tsp ground cinnamon
  • 1 Tbsp fresh lemon juice
  • 1 tsp honey

Instructions

  1. Cook ground turkey, onion and garlic in a large Dutch oven over medium heat, stirring until turkey is browned and crumbly.
  2. Stir in cabbage, tomatoes, tomato sauce, carrots, broth, red pepper and cinnamon.
  3. Bring to a boil, cover, reduce heat, and simmer 30 minutes, stirring occasionally, until cabbage is tender.
  4. Stir in lemon juice and honey.

Side Dish Ingredients

  • 6 oz whole-grain rotini pasta
  • 3 Tbsp extra virgin olive oil
  • 3 Tbsp grated Parmesan cheese
  • ½ tsp salt

Side Dish Instructions

  1. Cook pasta according to package directions. Drizzle with oil, and sprinkle with cheese and salt; toss.
