Unstuffed Cabbage Rolls

Ingredients

  • 2 lb grass-fed ground beef
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 head cabbage, chopped
  • 2 (14.5-oz) cans organic fire-roasted diced tomatoes
  • 1 (15-oz) can organic tomato sauce
  • 1 (10-oz) pkg matchstick-cut carrots
  • 1 cup organic chicken broth
  • 1 tsp crushed red pepper
  • ¼ tsp ground cinnamon
  • 1 Tbsp fresh lemon juice
  • 1 tsp raw honey

Instructions

  1. Cook ground beef, onion and garlic in a large Dutch oven over medium heat, stirring until beef is browned and crumbly.
  2. Drain and return to pan.
  3. Stir in cabbage, tomatoes, tomato sauce, carrots, broth, red pepper and cinnamon.
  4. Bring to a boil; cover, reduce heat, and simmer 30 minutes, stirring occasionally, until cabbage is tender.
  5. Stir in lemon juice and honey; season to taste.
