5-Ingredient Beef and Bean Soup

Ingredients

  • ½ lb ground beef
  • 1 (14.5-oz) can beef broth
  • 1 (15-oz) can great Northern beans, rinsed and drained
  • ½ (25-oz) can garlic and herb pasta sauce
  • ½ (10-oz) pkg angel hair coleslaw mix

Instructions

  1. Cook ground beef in a Dutch oven over medium heat stirring until browned and crumbly; drain.
  2. Stir in broth, beans, pasta sauce and coleslaw; bring to a boil, reduce heat, and simmer 15 minutes.

Side Dish Ingredients

  • 2 Tbsp butter, softened
  • 4 slices whole wheat bread
  • 1 cup shredded Monterey Jack cheese

Side Dish Instructions

  1. Spread butter on 1 side of each bread slice.
  2. Place 2 slices bread, buttered side down, in a nonstick skillet over medium heat.
  3. Top each with cheese and 1 slice bread, buttered side up.
  4. Cook 3 to 4 minutes per side or until bread is toasted and cheese is melted.
