Sweet and Sour Pork

Spicy Noodles and Snow Peas

Ingredients

  • 3 lb boneless pork shoulder roast, trimmed
  • 2 (14-oz) pkg frozen tricolor pepper and onion blend
  • 2 Tbsp bottled minced garlic
  • ½ cup apple cider vinegar
  • ½ cup low-sodium soy sauce
  • 1 Tbsp brown sugar
  • 2 cups pineapple chunks
  • 3 Tbsp cornstarch
  • ¼ cup cold water

Instructions

  1. Cut pork into cubes.
  2. Arrange pepper mix and garlic in a 6- to 7-quart slow cooker; top with pork.
  3. Stir together vinegar, soy sauce, and brown sugar; pour over pork.
  4. Cover and cook on LOW 6½ hours.
  5. Add pineapple to cooker.
  6. Cover and cook 30 minutes to 1 hour longer or until pork is tender.
  7. Whisk together cornstarch and cold water; add to cooker.
  8. Increase temperature to HIGH, and cook 5 minutes or until sauce is thickened.

Side Dish Ingredients

  • 2 (7.1-oz) pkg rice stir-fry noodles
  • 2 tsp sesame oil
  • ¼ tsp crushed red pepper
  • ½ cup chopped lightly salted cashews
  • 2 (6-oz) pkg microwavable snow peas
  • ¼ cup water

Side Dish Instructions

  1. Cook noodles according to package directions.
  2. Meanwhile, heat oil and crushed red pepper in a large skillet over medium heat 1 minute.
  3. Add snow peas and water; cover and steam 3 minutes or until snow peas are crisp-tender.
  4. Add cooked noodles, tossing to coat.
