Ground Chicken "Tacos"
Avocado Sauce
Ingredients
- 1 Tbsp avocado oil
- ½ onion, chopped
- ½ red bell pepper, chopped
- 2 cloves garlic, minced
- ¾ lb ground chicken (or ground turkey or grass-fed beef)
- 1 Tbsp chili powder
- ½ tsp ground coriander
- ¼ tsp salt
- ¼ tsp pepper
- 1 (10-oz) can mild diced tomatoes and green chiles, drained
- 2 Tbsp chopped fresh cilantro
- 4 romaine lettuce leaves
- 1 radish, thinly sliced (optional)
Instructions
- Heat oil in a large skillet over medium-high heat. Add onion, bell pepper and garlic.
- Cook 6 minutes or until tender, stirring frequently.
- Add ground chicken, chili powder, coriander, salt and pepper. Cook 5 minutes or until done.
- Stir in tomatoes and cilantro; cook 4 minutes or until thoroughly heated.
- For each taco, stack 2 leaves on a flat work surface; fill with chicken mixture and top with Avocado Sauce and, if desired, radish.
Side Dish Ingredients
- 1 avocado, pitted and cubed
- 1 small clove garlic
- ¼ cup water
- 2½ Tbsp extra virgin olive oil
- 1 Tbsp fresh lime juice
- 1 tsp hot sauce
- ½ tsp ground cumin
- ¼ tsp salt
Side Dish Instructions
- Process all ingredients in a food processor or blender until smooth.
