Ground Chicken "Tacos"

Ingredients

  • 1 Tbsp avocado oil
  • ½ onion, chopped
  • ½ red bell pepper, chopped
  • 2 cloves garlic, minced
  • ¾ lb ground chicken (or ground turkey or grass-fed beef)
  • 1 Tbsp chili powder
  • ½ tsp ground coriander
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 (10-oz) can mild diced tomatoes and green chiles, drained
  • 2 Tbsp chopped fresh cilantro
  • 4 romaine lettuce leaves
  • 1 radish, thinly sliced (optional)

Instructions

  1. Heat oil in a large skillet over medium-high heat. Add onion, bell pepper and garlic.
  2. Cook 6 minutes or until tender, stirring frequently.
  3. Add ground chicken, chili powder, coriander, salt and pepper. Cook 5 minutes or until done.
  4. Stir in tomatoes and cilantro; cook 4 minutes or until thoroughly heated.
  5. For each taco, stack 2 leaves on a flat work surface; fill with chicken mixture and top with Avocado Sauce and, if desired, radish.

Side Dish Ingredients

  • 1 avocado, pitted and cubed
  • 1 small clove garlic
  • ¼ cup water
  • 2½ Tbsp extra virgin olive oil
  • 1 Tbsp fresh lime juice
  • 1 tsp hot sauce
  • ½ tsp ground cumin
  • ¼ tsp salt

Side Dish Instructions

  1. Process all ingredients in a food processor or blender until smooth.
