Blackened Fish Tacos

Ingredients

  • 1½ lb flounder fillets (or other firm white fish)
  • 1 Tbsp blackened seasoning
  • 2 Tbsp butter
  • 1 (8-oz) carton reduced-fat sour cream
  • 1 cup refrigerated salsa
  • 1½ Tbsp fresh lime juice
  • 12 corn tortillas
  • 1 (10-oz) pkg angel hair coleslaw

Instructions

  1. Sprinkle fish with blackened seasoning.
  2. Melt butter in a large nonstick skillet over medium heat.
  3. Add fish, and cook, 5 to 6 minutes per side or until fish flakes with a fork.
  4. Meanwhile, stir together sour cream, salsa and lime juice.
  5. Flake fish into large pieces.
  6. Heat tortillas according to package directions.
  7. Serve fish in warm tortillas.
  8. Top with coleslaw and sour cream mixture.
  9. Serve 2 tacos per person.

Side Dish Ingredients

  • 3 navel oranges, peeled and thinly sliced
  • 1 Tbsp honey
  • 1 tsp lemon juice
  • 1 tsp ground cinnamon

Side Dish Instructions

  1. Arrange orange slices on a serving platter.
  2. Whisk together honey, lemon juice and cinnamon; drizzle over orange slices.
