Blackened Fish Tacos
Cinnamon OrangesIngredients
- 1½ lb flounder fillets (or other firm white fish)
- 1 Tbsp blackened seasoning
- 2 Tbsp butter
- 1 (8-oz) carton reduced-fat sour cream
- 1 cup refrigerated salsa
- 1½ Tbsp fresh lime juice
- 12 corn tortillas
- 1 (10-oz) pkg angel hair coleslaw
Instructions
- Sprinkle fish with blackened seasoning.
- Melt butter in a large nonstick skillet over medium heat.
- Add fish, and cook, 5 to 6 minutes per side or until fish flakes with a fork.
- Meanwhile, stir together sour cream, salsa and lime juice.
- Flake fish into large pieces.
- Heat tortillas according to package directions.
- Serve fish in warm tortillas.
- Top with coleslaw and sour cream mixture.
- Serve 2 tacos per person.
Side Dish Ingredients
- 3 navel oranges, peeled and thinly sliced
- 1 Tbsp honey
- 1 tsp lemon juice
- 1 tsp ground cinnamon
Side Dish Instructions
- Arrange orange slices on a serving platter.
- Whisk together honey, lemon juice and cinnamon; drizzle over orange slices.
