Salmon with Horseradish Sauce
Lemony Spinach
Ingredients
- 1 Tbsp olive oil
- ½ lb fresh or frozen salmon fillets
- ½ tsp dried basil
- ¼ tsp garlic powder
- ½ tsp salt
- ¼ tsp pepper
- ½ cup sour cream
- 1 Tbsp olive oil mayonnaise
- 1 Tbsp prepared horseradish
Instructions
- Heat oil in a large skillet over medium heat; sprinkle salmon with basil, garlic powder, salt and pepper.
- Cook fish 5 minutes per side until browned and fish flakes with fork.
- Combine sour cream, mayonnaise and horseradish; serve salmon with dollops of sauce.

- 1 Tbsp olive oil
- 1 (10-oz) pkg baby spinach
- 1 lemon
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Heat oil in a large nonstick skillet over medium heat; add spinach, and cook until spinach wilts.
- Grate rind from lemon to equal ½ tsp; squeeze juice to equal 1 Tbsp.
- Stir lemon rind, juice, salt and pepper into spinach.
