Salmon with Horseradish Sauce

Ingredients

  • 1 Tbsp olive oil
  • ½ lb fresh or frozen salmon fillets
  • ½ tsp dried basil
  • ¼ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp pepper
  • ½ cup sour cream
  • 1 Tbsp olive oil mayonnaise
  • 1 Tbsp prepared horseradish

Instructions

  1. Heat oil in a large skillet over medium heat; sprinkle salmon with basil, garlic powder, salt and pepper.
  2. Cook fish 5 minutes per side until browned and fish flakes with fork.
  3. Combine sour cream, mayonnaise and horseradish; serve salmon with dollops of sauce.

Side Dish Ingredients

  • 1 Tbsp olive oil
  • 1 (10-oz) pkg baby spinach
  • 1 lemon
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Heat oil in a large nonstick skillet over medium heat; add spinach, and cook until spinach wilts.
  2. Grate rind from lemon to equal ½ tsp; squeeze juice to equal 1 Tbsp.
  3. Stir lemon rind, juice, salt and pepper into spinach.
