Spicy Black Bean Soup

Ingredients

  • 1 Tbsp olive oil
  • ½ onion, chopped
  • 1 clove garlic, minced
  • 1 cup organic vegetable broth
  • ½ (10-oz) can diced tomatoes with green chiles
  • 2 (15.5-oz) cans organic black beans, drained
  • 1 tsp ground cumin
  • ¼ cup sour cream
  • 2 Tbsp chopped fresh cilantro

Instructions

  1. Heat oil in a Dutch oven over medium heat; add onion and garlic.
  2. Sauté 5 minutes or until tender; add broth, tomatoes, black beans and cumin.
  3. Cook 10 minutes or until bubbly; mash soup beans slightly for a thicker texture.
  4. Top each serving with sour cream and cilantro.

Side Dish Ingredients

  • 1 avocado, sliced
  • 1 grapefruit, peeled and sliced
  • 1 navel orange, peeled and sliced

Side Dish Instructions

  1. Combine all ingredients in a serving bowl; chill until ready to serve.
