Spicy Black Bean Soup
Avocado-Citrus SaladIngredients
- 1 Tbsp olive oil
- ½ onion, chopped
- 1 clove garlic, minced
- 1 cup organic vegetable broth
- ½ (10-oz) can diced tomatoes with green chiles
- 2 (15.5-oz) cans organic black beans, drained
- 1 tsp ground cumin
- ¼ cup sour cream
- 2 Tbsp chopped fresh cilantro
Instructions
- Heat oil in a Dutch oven over medium heat; add onion and garlic.
- Sauté 5 minutes or until tender; add broth, tomatoes, black beans and cumin.
- Cook 10 minutes or until bubbly; mash soup beans slightly for a thicker texture.
- Top each serving with sour cream and cilantro.

- 1 avocado, sliced
- 1 grapefruit, peeled and sliced
- 1 navel orange, peeled and sliced
Side Dish Instructions
- Combine all ingredients in a serving bowl; chill until ready to serve.
