Sweet and Sour Pork
Spicy Noodles and Snow PeasIngredients
- 1 lb boneless pork shoulder roast, trimmed
- 1 (14-oz) pkg frozen tricolor pepper and onion blend
- ½ Tbsp bottled minced garlic
- 3 Tbsp apple cider vinegar
- 3 Tbsp low-sodium soy sauce
- ½ Tbsp brown sugar
- 1 cup pineapple chunks
- 1 Tbsp cornstarch
- 2 Tbsp cold water
Instructions
- Cut pork into cubes.
- Arrange pepper mix and garlic in a 3-or 4-quart slow cooker; top with pork.
- Stir together vinegar, soy sauce, and brown sugar; pour over pork.
- Cover and cook on LOW 6 hours.
- Add pineapple to slow cooker.
- Cover and cook 30 minutes to 1 hour or until pork is tender.
- Whisk together cornstarch and cold water; add to cooker.
- Increase temperature to HIGH, and cook 5 minutes or until sauce is thickened.
Side Dish Ingredients
- 1 (7.1-oz) pkg rice stir-fry noodles
- 1 tsp sesame oil
- Pinch of crushed red pepper
- ¼ cup chopped lightly salted cashews
- 1 (6-oz) pkg microwavable snow peas
- 2 Tbsp water
Side Dish Instructions
- Cook noodles according to package directions.
- Meanwhile, heat oil and crushed red pepper in a large skillet over medium heat 1 minute.
- Add snow peas and water; cover and steam 3 minutes or until snow peas are crisp-tender.
- Add cooked noodles, tossing to coat.
