Mushroom-Brie Mac and Cheese
Creamy Kale-Apple Salad
Ingredients
- 1 (8-oz) Brie round
- 1 (16-oz) pkg whole-grain elbow pasta
- ½ cup butter
- 2 (16-oz) pkg sliced mushrooms
- 1 shallot, minced
- ½ tsp salt
- ½ tsp pepper
- ¼ cup all-purpose flour
- 3 cups reduced-fat 2% milk
- 1 cup whole wheat panko breadcrumbs
Instructions
- Preheat broiler.
- Remove rind from Brie cheese with a paring knife; cube cheese.
- Cook pasta according to package directions.
- While pasta cooks, melt 3 Tbsp butter in a large skillet over medium-high heat.
- Add mushrooms, shallot, salt and pepper; cook, stirring occasionally, 10 minutes or until tender.
- Remove from heat.
- Melt 3 Tbsp butter in a saucepan over medium heat; whisk in flour, and cook, whisking constantly 2 minutes.
- Gradually add milk, whisking until smooth; bring to a simmer.
- Cook, whisking constantly until thickened.
- Stir in pasta and cheese; spoon into a 13-x 9-inch baking dish coated with cooking spray, or 6 individual ramekins.
- Melt remaining 2 Tbsp butter in a small bowl; add panko, tossing to coat.
- Sprinkle over pasta.
- Broil 3 to 5 minutes or until breadcrumbs are toasted and edges are bubbly.
Side Dish Ingredients
- 2 (5-oz) pkg baby kale mix
- 1 (14-oz) pkg sliced sweet red apples
- ⅓ cup light poppy seed salad dressing
Side Dish Instructions
- Toss together all ingredients in a serving bowl.
