Cheater's Lasagna

Ingredients

  • 8 oz wide egg noodles
  • ¾ lb ground beef
  • 1 lb sweet Italian sausage, casings removed (or use all ground beef)
  • 1½ to 2 tsp Italian seasoning
  • 1 (24-oz) jar favorite pasta sauce
  • 1 (8-oz) can tomato sauce
  • 1 cup cottage cheese
  • 1 (8-oz) block mozzarella cheese, shredded
  • 1 cup freshly grated Parmesan cheese

Instructions

  1. Preheat oven to 400°F.
  2. Cook noodles according to package directions; drain.
  3. Meanwhile, cook beef, sausage and seasoning in a large skillet over medium-high heat until no longer pink; drain, return to pan, and stir in pasta sauce and tomato sauce.
  4. Combine noodles and cottage cheese; stir into beef mixture.
  5. Spoon into a greased 13- x 9-inch baking dish or a large cast-iron skillet; sprinkle with mozzarella and Parmesan.
  6. Bake 15 minutes or until bubbly.

  • 1 cup butter
  • 2 (4-oz) bars unsweetened chocolate, chopped
  • 5 large eggs
  • 2 cups granulated sugar
  • 1½ cups packed brown sugar
  • 1 Tbsp vanilla extract
  • 1¾ cups all-purpose flour
  • ⅛ tsp salt
  • Powdered sugar (optional)

Side Dish Instructions

  1. Preheat oven to 350°F. Line a 13-x 9-inch pan with foil, letting excess hang over sides of pan. Coat foil with baking spray with flour.
  2. Melt butter and chocolate in a small saucepan over low heat, stirring until smooth.
  3. Beat eggs, sugars and vanilla at medium-high speed with a mixer 5 minutes or until light and fluffy.
  4. Gradually add flour and salt, beating until smooth.
  5. Gradually beat in chocolate mixture.
  6. Pour batter into pan.
  7. Bake 35 to 40 minutes or until center is set. Cool completely.
  8. Using foil as handles, lift brownies from pan, and cut into bars; sprinkle with powdered sugar.
