Italian Chicken Soup with Kale and Gnocchi

Ingredients

  • 1 Tbsp olive oil
  • ½ (1.87-lb) pkg boneless, skinless chicken breasts, chopped
  • ½ cup chopped onion
  • 2 cloves garlic, minced
  • 1 (32-oz) carton chicken broth
  • 1 tsp Italian seasoning
  • ½ (16-oz) pkg gnocchi
  • ½ (16-oz) pkg frozen chopped kale

Instructions

  1. Heat oil in a Dutch oven over medium-high heat.
  2. Season chicken with salt and pepper; add to pot along with onion and garlic. Cook 6 minutes or until chicken is done.
  3. Stir in broth and Italian seasonoing; bring to a boil.
  4. Stir in gnocchi and kale; reduce heat, and simmer 8 minutes or until gnocchi are done.

Side Dish Ingredients

  • ½ (16-oz) loaf frozen garlic bread

Side Dish Instructions

  1. Bake bread according to package directions.
