Supreme Pizza Polenta "Nachos"

Ingredients

  • 2 (18-oz) logs refrigerated polenta
  • 3 Tbsp olive oil, divided
  • 1 (3.5-oz) pkg sliced pepperoni
  • 1 green bell pepper, thinly sliced
  • 1 (3.8-oz) can sliced black olives
  • 1 (8-oz) pkg shredded part-skim mozzarella cheese
  • 1 (15.5-oz) jar marinara sauce

Instructions

  1. Preheat broiler.
  2. Cut polenta into ¼-inch-thick slices; place on a rimmed baking sheet brushed with 1½ Tbsp oil.
  3. Brush tops of polenta rounds with remaining 1½ Tbsp oil.
  4. Broil 5 minutes or until one side is crispy; turn and broil 5 minutes longer.
  5. Top with pepperoni, bell pepper, olives and cheese.
  6. Broil 3 minutes or until cheese is melted.
  7. Heat marinara sauce according to package directions. Serve with nachos.

Side Dish Ingredients

  • 2 (9-oz) pkg baby spinach
  • 1 (8-oz) pkg sliced mushrooms
  • ½ cup sliced red onion
  • ⅓ cup refrigerated balsamic vinaigrette

Side Dish Instructions

  1. Toss together all ingredients in a serving bowl.
