Supreme Pizza Polenta "Nachos"
Spinach Salad
Ingredients
- 2 (18-oz) logs refrigerated polenta
- 3 Tbsp olive oil, divided
- 1 (3.5-oz) pkg sliced pepperoni
- 1 green bell pepper, thinly sliced
- 1 (3.8-oz) can sliced black olives
- 1 (8-oz) pkg shredded part-skim mozzarella cheese
- 1 (15.5-oz) jar marinara sauce
Instructions
- Preheat broiler.
- Cut polenta into ¼-inch-thick slices; place on a rimmed baking sheet brushed with 1½ Tbsp oil.
- Brush tops of polenta rounds with remaining 1½ Tbsp oil.
- Broil 5 minutes or until one side is crispy; turn and broil 5 minutes longer.
- Top with pepperoni, bell pepper, olives and cheese.
- Broil 3 minutes or until cheese is melted.
- Heat marinara sauce according to package directions. Serve with nachos.
Side Dish Ingredients
- 2 (9-oz) pkg baby spinach
- 1 (8-oz) pkg sliced mushrooms
- ½ cup sliced red onion
- ⅓ cup refrigerated balsamic vinaigrette
Side Dish Instructions
- Toss together all ingredients in a serving bowl.
