Smothered Chicken Breasts

Ingredients

  • 4 slices center-cut bacon
  • 6 (6-oz) boneless, skinless chicken breasts
  • ½ tsp salt
  • ¼ tsp pepper
  • 1 Tbsp olive oil
  • ¾ cup barbecue sauce
  • 6 slices sharp Cheddar cheese
  • 1 (3-oz) pkg sliced green onions

Instructions

  1. Cook bacon in a large skillet over medium-high heat 6 to 8 minutes or until crisp.
  2. Remove to paper towels to drain, reserving drippings in skillet.
  3. Crumble bacon.
  4. Sprinkle chicken with salt and pepper; add oil to drippings in skillet.
  5. Brown chicken 4 to 5 minutes per side in hot oil over medium-high heat; spoon 2 Tbsp barbecue sauce onto each chicken breast.
  6. Top each with 1 cheese slice; cover and cook 1 minute longer or until cheese is melted.
  7. Sprinkle chicken with bacon and green onions.

Side Dish Ingredients

  • 6 (8-oz) microwave baking potatoes (see Note)
  • 6 Tbsp butter
  • ¾ tsp salt
  • ½ tsp pepper
  • 2 (12-oz) pkg broccoli florets 
  • ½ cup low-sodium chicken broth

Side Dish Instructions

  1. Microwave potatoes according to package directions.
  2. Split potatoes in half; top with butter, ½ tsp salt, and ¼ tsp pepper.
  3. Meanwhile, combine broccoli, broth, and ¼ tsp each salt and pepper in a large saucepan; bring to a boil.
  4. Cover, reduce heat, and simmer 5 minutes or until broccoli is crisp-tender.
