Smothered Chicken Breasts
Jacket Potatoes and Steamed Broccoli
Ingredients
- 4 slices center-cut bacon
- 6 (6-oz) boneless, skinless chicken breasts
- ½ tsp salt
- ¼ tsp pepper
- 1 Tbsp olive oil
- ¾ cup barbecue sauce
- 6 slices sharp Cheddar cheese
- 1 (3-oz) pkg sliced green onions
Instructions
- Cook bacon in a large skillet over medium-high heat 6 to 8 minutes or until crisp.
- Remove to paper towels to drain, reserving drippings in skillet.
- Crumble bacon.
- Sprinkle chicken with salt and pepper; add oil to drippings in skillet.
- Brown chicken 4 to 5 minutes per side in hot oil over medium-high heat; spoon 2 Tbsp barbecue sauce onto each chicken breast.
- Top each with 1 cheese slice; cover and cook 1 minute longer or until cheese is melted.
- Sprinkle chicken with bacon and green onions.
Side Dish Ingredients
- 6 (8-oz) microwave baking potatoes (see Note)
- 6 Tbsp butter
- ¾ tsp salt
- ½ tsp pepper
- 2 (12-oz) pkg broccoli florets
- ½ cup low-sodium chicken broth
Side Dish Instructions
- Microwave potatoes according to package directions.
- Split potatoes in half; top with butter, ½ tsp salt, and ¼ tsp pepper.
- Meanwhile, combine broccoli, broth, and ¼ tsp each salt and pepper in a large saucepan; bring to a boil.
- Cover, reduce heat, and simmer 5 minutes or until broccoli is crisp-tender.
