Crispy Baked Tilapia

Broccoli-Cheddar Rice and Corn on the Cob

Ingredients

  • 1 cup panko breadcrumbs
  • 2 Tbsp chopped fresh parsley
  • 2 tsp grated lemon peel
  • 2 cloves garlic, minced
  • 1½ lb frozen tilapia filets, thawed and pat dry
  • ½ tsp salt
  • 2 Tbsp butter, melted

Instructions

  1. Preheat oven to 400°F .
  2. Stir together panko, parsley, lemon peel and garlic.
  3. Place tilapia on a greased wire rack set inside a rimmed baking sheet; sprinkle with salt.
  4. Spoon breadcrumb mixture evenly over fillets, pressing down gently.
  5. Drizzle with butter.
  6. Bake 10 to 15 minutes or until fish flakes with a fork.

Side Dish Ingredients

  • 1½ cups long-grain rice
  • 1 lb broccoli crown, finely chopped
  • 6 Tbsp butter, divided
  • ½ cup shredded Cheddar cheese
  • 1 (8-count) pkg frozen corn on the cob

Side Dish Instructions

  1. Cook rice according to package directions; add chopped broccoli during last 5 minutes of cooking.
  2. Stir in 1 Tbsp butter and cheese; season to taste.
  3. Steam corn on the cob according to package directions; brush ears with remaining 5 Tbsp butter until melted.
  4. Season with salt and pepper.
