Crispy Baked Tilapia
Broccoli-Cheddar Rice and Corn on the CobIngredients
- 1 cup panko breadcrumbs
- 2 Tbsp chopped fresh parsley
- 2 tsp grated lemon peel
- 2 cloves garlic, minced
- 1½ lb frozen tilapia filets, thawed and pat dry
- ½ tsp salt
- 2 Tbsp butter, melted
Instructions
- Preheat oven to 400°F .
- Stir together panko, parsley, lemon peel and garlic.
- Place tilapia on a greased wire rack set inside a rimmed baking sheet; sprinkle with salt.
- Spoon breadcrumb mixture evenly over fillets, pressing down gently.
- Drizzle with butter.
- Bake 10 to 15 minutes or until fish flakes with a fork.
Side Dish Ingredients
- 1½ cups long-grain rice
- 1 lb broccoli crown, finely chopped
- 6 Tbsp butter, divided
- ½ cup shredded Cheddar cheese
- 1 (8-count) pkg frozen corn on the cob
Side Dish Instructions
- Cook rice according to package directions; add chopped broccoli during last 5 minutes of cooking.
- Stir in 1 Tbsp butter and cheese; season to taste.
- Steam corn on the cob according to package directions; brush ears with remaining 5 Tbsp butter until melted.
- Season with salt and pepper.
