Apple-Stuffed Pork Tenderloin

Ingredients

  • 2 (1-lb) pork tenderloins, trimmed
  • ¾ tsp salt
  • ¾ tsp pepper
  • 2 Tbsp butter
  • 1 crisp red apple, chopped
  • ½ cup chopped onion
  • ½ cup chopped celery
  • ¼ cup panko breadcrumbs
  • 2 Tbsp chopped fresh thyme
  • 2 Tbsp olive oil

Instructions

  1. Preheat oven to 400°F.
  2. Carefully cut each pork tenderloin lengthwise to within ½-inch of other side (but not all the way through pork).
  3. Open up each tenderloin like a book; place between 2 sheets of plastic wrap, and pound meat to ½-inch-thickness using a meat mallet or rolling pin.
  4. Sprinkle pork all over with salt and pepper.
  5. Melt butter in a large skillet over medium heat.
  6. Add apple, onion and celery; cook, stirring, 7 to 8 minutes or until vegetables are tender.
  7. Remove from heat; stir in panko and thyme.
  8. Spread mixture over cut sides of pork. Close each pork tenderloin, and tie with kitchen twine at 1-inch intervals.
  9. Heat oil in same skillet over medium-high heat.
  10. Add pork, in 2 batches if necessary, and cook 5 minutes per side or until browned. Transfer to a foil-lined rimmed baking sheet.
  11. Bake 10 to 15 minutes or until a meat thermometer inserted near center of meat registers 145°F.
  12. Let stand 10 minutes before slicing.
