Orange and Pistachio Chia Pudding

Ingredients

  • 2 oranges
  • ⅓ cup chia seeds
  • 1¾ cups 1% low-fat milk
  • 3 Tbsp pure maple syrup
  • 1 tsp pure vanilla extract
  • ½ tsp ground cinnamon
  • ⅛ tsp salt
  • 6 Tbsp salted and roasted pistachios

Instructions

  1. Grate 1 orange to remove rind. Combine orange rind, chia seeds, milk, 1 Tbsp maple syrup, vanilla, cinnamon and salt.
  2. Cover and refrigerate overnight.
  3. Peel and section oranges; coarsely chop sections. Top each serving of pudding with pistachios, chopped orange, and remaining 2 Tbsp maple syrup.
