Orange and Pistachio Chia Pudding

Ingredients
- 2 oranges
- ⅓ cup chia seeds
- 1¾ cups 1% low-fat milk
- 3 Tbsp pure maple syrup
- 1 tsp pure vanilla extract
- ½ tsp ground cinnamon
- ⅛ tsp salt
- 6 Tbsp salted and roasted pistachios
Instructions
- Grate 1 orange to remove rind. Combine orange rind, chia seeds, milk, 1 Tbsp maple syrup, vanilla, cinnamon and salt.
- Cover and refrigerate overnight.
- Peel and section oranges; coarsely chop sections. Top each serving of pudding with pistachios, chopped orange, and remaining 2 Tbsp maple syrup.
