Spicy Maple Salmon
Sautéed Lemon Asparagus and MushroomsIngredients
- ⅓ cup spicy brown mustard
- 3 Tbsp pure maple syrup
- ½ tsp kosher salt
- ¼ tsp cayenne pepper
- 6 (6-oz) salmon fillets
Instructions
- Preheat broiler.
- Combine mustard, syrup, salt and cayenne pepper in a small bowl.
- Brush mixture over salmon fillets; place fillets on a parchment paper-lined baking sheet.
- Broil 8 minutes or until fish flakes with a fork.
Side Dish Ingredients
- ¼ cup avocado oil
- 2 lb fresh asparagus, trimmed
- 1 Tbsp fresh lemon juice
- 2 tsp grated lemon rind
- 1 (16-oz) pkg sliced mushrooms
Side Dish Instructions
- Heat 2 Tbsp oil in large skillet over medium-high heat.
- Add asparagus; cook 5 minutes or until crisp-tender.
- Stir in lemon juice and lemon rind; cook 1 minute. Season with salt and pepper to taste.
- Remove from skillet; cover to keep warm.
- Heat 2 Tbsp oil in skillet over medium-high heat. Add mushrooms; generously season with salt and pepper.
- Sauté 10 to 15 minutes or until well browned, turning once after 10 minutes.
- Serve asparagus and mushrooms alongside salmon.
