Spicy Maple Salmon

Sautéed Lemon Asparagus and Mushrooms

Ingredients

  • ⅓ cup spicy brown mustard
  • 3 Tbsp pure maple syrup
  • ½ tsp kosher salt
  • ¼ tsp cayenne pepper
  • 6 (6-oz) salmon fillets

Instructions

  1. Preheat broiler.
  2. Combine mustard, syrup, salt and cayenne pepper in a small bowl.
  3. Brush mixture over salmon fillets; place fillets on a parchment paper-lined baking sheet.
  4. Broil 8 minutes or until fish flakes with a fork.

Side Dish Ingredients

  • ¼ cup avocado oil
  • 2 lb fresh asparagus, trimmed
  • 1 Tbsp fresh lemon juice
  • 2 tsp grated lemon rind
  • 1 (16-oz) pkg sliced mushrooms

Side Dish Instructions

  1. Heat 2 Tbsp oil in large skillet over medium-high heat.
  2. Add asparagus; cook 5 minutes or until crisp-tender.
  3. Stir in lemon juice and lemon rind; cook 1 minute. Season with salt and pepper to taste.
  4. Remove from skillet; cover to keep warm.
  5. Heat 2 Tbsp oil in skillet over medium-high heat. Add mushrooms; generously season with salt and pepper.
  6. Sauté 10 to 15 minutes or until well browned, turning once after 10 minutes.
  7. Serve asparagus and mushrooms alongside salmon.
