Skillet Sausage and Peppers
Cauliflower and Broccoli "Rice"
Ingredients
- 1 (20-oz) pkg mild Italian turkey sausage links
- 2 Tbsp olive oil
- 2 (12-oz) pkg fajita vegetable mix
- 1 (14.5-oz) can diced tomatoes
- 2 Tbsp tomato paste
- 1 cup dry white wine
- 2 cloves garlic, minced
Instructions
- Cook sausages in hot oil in a large, deep skillet over medium-high heat 5 minutes or until browned, turning to cook on all sides.
- Remove from skillet. Add vegetables; sauté 5 minutes.
- Cut sausages in half, and return to skillet; add tomatoes, tomato paste, wine and garlic.
- Bring to a boil; reduce heat, and simmer 15 minutes or until sauce is thick and sausages are done.
Side Dish Ingredients
- 2 (12-oz) pkg frozen riced cauliflower and broccoli (such as Green Giant)
- 2 Tbsp butter
- ½ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Cook cauliflower rice according to package directions; stir in butter, salt and pepper.
