Skillet Sausage and Peppers

Ingredients

  • 1 (20-oz) pkg mild Italian turkey sausage links
  • 2 Tbsp olive oil
  • 2 (12-oz) pkg fajita vegetable mix
  • 1 (14.5-oz) can diced tomatoes
  • 2 Tbsp tomato paste
  • 1 cup dry white wine
  • 2 cloves garlic, minced

Instructions

  1. Cook sausages in hot oil in a large, deep skillet over medium-high heat 5 minutes or until browned, turning to cook on all sides.
  2. Remove from skillet. Add vegetables; sauté 5 minutes.
  3. Cut sausages in half, and return to skillet; add tomatoes, tomato paste, wine and garlic.
  4. Bring to a boil; reduce heat, and simmer 15 minutes or until sauce is thick and sausages are done.

Side Dish Ingredients

  • 2 (12-oz) pkg frozen riced cauliflower and broccoli (such as Green Giant)
  • 2 Tbsp butter
  • ½ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Cook cauliflower rice according to package directions; stir in butter, salt and pepper.
