Skillet Sausages and Peppers
Cauliflower and Broccoli "Rice"
Ingredients
- ½ (19-oz) pkg mild Italian pork sausage links (such as Johnsonville)
- 1 Tbsp olive oil
- 1 small green bell pepper, sliced
- 1 small red bell pepper, sliced
- 1 cup sliced onion
- 1 (14.5-oz) can diced tomatoes
- 1 Tbsp tomato paste
- ½ cup dry white wine
- 1 clove garlic, minced
Instructions
- Cook sausages in hot oil in a large skillet over medium-high heat 5 minutes or until browned, turning to cook on all sides.
- Remove from skillet. Add bell peppers and onion; sauté 5 minutes.
- Cut sausages crosswise in half; return to skillet. Add tomatoes, tomato paste, wine and garlic.
- Bring to a boil; reduce heat, and simmer 15 minutes or until sauce is thick and sausages are done.

- 1 (12-oz) pkg frozen riced cauliflower and broccoli (such as Green Giant)
- 1 Tbsp olive oil
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Cook cauliflower rice according to package directions; stir in oil, salt and pepper.
