Chicken Pad Thai
Green Papaya Salad
Ingredients
- 2 (8-oz) pkg pad thai noodles
- 1 (8-oz) jar pad thai sauce
- 1 deli rotisserie chicken, skinned and shredded
- 1 (8-oz) pkg bean sprouts
- 6 green onions, cut into 1-inch pieces
- ¼ cup chopped fresh cilantro
- ¼ cup chopped unsalted dry-roasted peanuts
- 2 limes, cut into wedges
Instructions
- Prepare noodles according to package directions; drain, reserving ½ cup cooking liquid.
- Combine cooking liquid and pad thai sauce in a large skillet; stir in chicken, bean sprouts, green onions and pasta.
- Cook over medium heat 3 minutes until sauce is thickened and mixture is thoroughly heated.
- Top with cilantro and peanuts; serve with lime wedges.
Side Dish Ingredients
- 1 medium-size green papaya, peeled and seeded
- 1 jalapeño pepper, seeded and minced
- 2 Tbsp fresh lime juice
- 1 Tbsp fish sauce
- 1 Tbsp olive oil
- 1 tsp brown sugar
- 2 Roma tomatoes, chopped
- 2 Tbsp chopped fresh basil
Side Dish Instructions
- Shred papaya using the large holes of a box grater.
- Whisk together jalapeño, lime juice, fish sauce, oil and brown sugar; add to papaya.
- Add tomatoes and basil; toss to coat.
