Tex-Mex Beef and Rice Skillet Meal

Ingredients

  • 1 lb ground beef
  • 1 (1.25-oz) envelope taco seasoning mix
  • 1 cup long-grain rice
  • 1 (14.5-oz) can chicken broth
  • 1 (10-oz) can diced tomatoes and green chiles
  • 1 (15-oz) can black beans, rinsed and drained
  • 1 (15-oz) can corn, drained
  • 1 (8-oz) pkg shredded taco blend cheese

Instructions

  1. Cook ground beef in a large skillet over medium heat, stirring until beef is browned and crumbly; drain and return to skillet.
  2. Stir in taco seasoning mix and rice; cook 1 minute.
  3. Stir in broth, tomatoes and green chiles, beans and corn.
  4. Bring to a boil, cover, reduce heat, and simmer 15 to 20 minutes or until rice is tender, stirring occasionally.
  5. Sprinkle with cheese; cover and let stand 2 minutes or until cheese is melted.

Side Dish Ingredients

  • ½ cup Ranch dressing
  • ½ tsp chili powder
  • ½ tsp pepper
  • 1 romaine lettuce heart, chopped
  • 2 tomatoes, chopped
  • 1 (3.5-oz) pkg tricolor tortilla strips

Side Dish Instructions

  1. Stir together dressing, chili powder and pepper in a large bowl.
  2. Add lettuce, tomatoes and tortilla strips just before serving; toss.
