Tex-Mex Beef and Rice Skillet Meal
Mixed Greens Salad with Crunchy Tortilla StripsIngredients
- 1 lb ground beef
- 1 (1.25-oz) envelope taco seasoning mix
- 1 cup long-grain rice
- 1 (14.5-oz) can chicken broth
- 1 (10-oz) can diced tomatoes and green chiles
- 1 (15-oz) can black beans, rinsed and drained
- 1 (15-oz) can corn, drained
- 1 (8-oz) pkg shredded taco blend cheese
Instructions
- Cook ground beef in a large skillet over medium heat, stirring until beef is browned and crumbly; drain and return to skillet.
- Stir in taco seasoning mix and rice; cook 1 minute.
- Stir in broth, tomatoes and green chiles, beans and corn.
- Bring to a boil, cover, reduce heat, and simmer 15 to 20 minutes or until rice is tender, stirring occasionally.
- Sprinkle with cheese; cover and let stand 2 minutes or until cheese is melted.
Side Dish Ingredients
- ½ cup Ranch dressing
- ½ tsp chili powder
- ½ tsp pepper
- 1 romaine lettuce heart, chopped
- 2 tomatoes, chopped
- 1 (3.5-oz) pkg tricolor tortilla strips
Side Dish Instructions
- Stir together dressing, chili powder and pepper in a large bowl.
- Add lettuce, tomatoes and tortilla strips just before serving; toss.
