Crispy Baked Lemon Tilapia
Parmesan Broccoli
Ingredients
- 1 cup whole wheat Panko breadcrumbs
- 2 Tbsp chopped fresh parsley
- 2 tsp grated lemon rind
- 2 cloves garlic, minced
- 1½ lb frozen tilapia filets, thawed and patted dry
- ½ tsp salt
- ½ tsp pepper
- 2 large eggs, lightly beaten
- 3 Tbsp butter, melted
Instructions
- Preheat oven to 400°F.
- Place a wire rack inside a rimmed baking sheet; spray with cooking spray.
- Stir together panko, parsley, lemon rind and garlic.
- Sprinkle fish with salt and pepper; dredge fish in egg and then in breadcrumb mixture.
- Place fish on rack; drizzle with butter.
- Bake 10 to 15 minutes or until fish flakes with a fork.
Side Dish Ingredients
- 1½ lb broccoli crowns, cut into florets
- 3 Tbsp olive oil
- ½ tsp salt
- ½ tsp pepper
- 2 cloves garlic, minced
- ¼ cup freshly grated Parmesan cheese
Side Dish Instructions
- Preheat oven to 400°F.
- Combine broccoli, oil, salt, and pepper on a baking sheet; bake 20 minutes or until almost tender.
- Add garlic and cheese; bake 5 minutes longer or until broccoli is browned and tender.
