Turkey Burgers with Chipotle Mayonnaise

Ingredients

  • ½ cup reduced-fat mayonnaise
  • ¼ cup fat-free sour cream
  • 1 Tbsp chopped chipotle peppers in adobo sauce
  • 1 clove garlic, minced
  • 1 (20-oz) pkg 93% lean ground turkey
  • ½ tsp salt
  • ⅛ tsp pepper
  • 6 (1.5-oz) whole-wheat hamburger buns, toasted
  • 1 red bell pepper, thinly sliced
  • 1½ cups arugula

Instructions

  1. Whisk together mayonnaise, sour cream, chipotle pepper and garlic in a small bowl; refrigerate until needed.
  2. Shape turkey into 6 (4-inch) patties; sprinkle both sides of patties with salt and pepper.
  3. Heat a large nonstick skillet over medium-high heat; coat both sides of the patties with cooking spray and cook 4 to 5 minutes on each side or until done.
  4. Spread mayonnaise mixture evenly over the bottom of each bun; top with patties, bell pepper and arugula. Cover with bun tops.

Side Dish Ingredients

  • 2 Tbsp canola oil
  • 1 lb frozen corn, thawed (See Note)
  • 1 Tbsp lime juice
  • 2 tsp sriracha sauce
  • ¼ tsp salt
  • 3 cups cubed pineapple

Side Dish Instructions

  1. Heat oil in a skillet over medium-high heat.
  2. Add corn; sauté 4 to 5 minutes or until tender.
  3. Stir in lime juice, sriracha sauce and salt.
  4. Serve corn and pineapple alongside burgers.
