Pork and White Bean Cassoulet
Garlic Toasts and Steamed BroccoliIngredients
- 4 slices center-cut bacon, chopped
- 1½ lb boneless pork shoulder roast, cut into 1-inch pieces
- ½ lb ground Italian sausage
- 2 (15.5-oz) cans great Northern beans, drained and rinsed
- 1 (14.5-oz) can fire-roasted diced tomatoes
- 1 (8-oz) pkg diced celery and onion
- 1 Tbsp bottled minced garlic
- 2 Tbsp tomato paste
Instructions
- Cook bacon in a large skillet until crisp, reserving drippings in skillet; remove bacon, and reserve.
- Brown pork in drippings; transfer to a 4- to 6-quart slow cooker.
- Cook sausage over medium heat, stirring until browned and crumbly; drain and transfer to cooker.
- Add beans, tomatoes, celery and onion, garlic and tomato paste.
- Cover and cook on LOW 8 hours or until pork is tender.
- Top each serving with bacon, and serve over Garlic Toasts.
Side Dish Ingredients
- 1 (12-oz) whole wheat baguette, thinly sliced
- 2 Tbsp olive oil
- 1 Tbsp bottled minced garlic
- 2 (12-oz) pkg broccoli florets
- ½ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Preheat broiler.
- Brush bread with oil and garlic; broil 1 minute or until toasted.
- Meanwhile, microwave broccoli according to package directions; sprinkle with salt and pepper.
