Pork and White Bean Cassoulet

Garlic Toasts and Steamed Broccoli

Ingredients

  • 4 slices center-cut bacon, chopped
  • 1½ lb boneless pork shoulder roast, cut into 1-inch pieces
  • ½ lb ground Italian sausage
  • 2 (15.5-oz) cans great Northern beans, drained and rinsed
  • 1 (14.5-oz) can fire-roasted diced tomatoes
  • 1 (8-oz) pkg diced celery and onion
  • 1 Tbsp bottled minced garlic
  • 2 Tbsp tomato paste

Instructions

  1. Cook bacon in a large skillet until crisp, reserving drippings in skillet; remove bacon, and reserve.
  2. Brown pork in drippings; transfer to a 4- to 6-quart slow cooker.
  3. Cook sausage over medium heat, stirring until browned and crumbly; drain and transfer to cooker.
  4. Add beans, tomatoes, celery and onion, garlic and tomato paste.
  5. Cover and cook on LOW 8 hours or until pork is tender.
  6. Top each serving with bacon, and serve over Garlic Toasts.

Side Dish Ingredients

  • 1 (12-oz) whole wheat baguette, thinly sliced
  • 2 Tbsp olive oil
  • 1 Tbsp bottled minced garlic
  • 2 (12-oz) pkg broccoli florets
  • ½ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Preheat broiler.
  2. Brush bread with oil and garlic; broil 1 minute or until toasted.
  3. Meanwhile, microwave broccoli according to package directions; sprinkle with salt and pepper.
