Mu Shu Pork Wraps

Ingredients

  • 1½ Tbsp dark sesame oil
  • ½ lb pork tenderloin, cut into 1-inch strips
  • ⅛ tsp salt
  • ¼ tsp pepper
  • 2 (5-oz) pkg sliced shiitake mushrooms
  • ½ Tbsp bottled minced garlic
  • ½ (16-oz) pkg tricolor coleslaw mix
  • 3 Tbsp hoisin sauce
  • ½ Tbsp minced ginger (from a 4-oz tube)
  • 6 fajita-size flour tortillas

Instructions

  1. Heat oil in a nonstick skillet or wok over medium-high heat.
  2. Sprinkle pork with salt and pepper; add to skillet along with mushrooms and garlic.
  3. Cook, stirring, 7 minutes or until pork is done and mushrooms are tender.
  4. Add coleslaw mix; cook 3 minutes.
  5. Stir in hoisin sauce and ginger; cook until thoroughly heated.
  6. Serve in tortillas.

  • 1 (1-lb) pkg trimmed green beans
  • 1 Tbsp low-sodium soy sauce
  • 2 Tbsp low-sodium chicken broth

Side Dish Instructions

  1. Heat oil in a large nonstick skillet over medium-high heat.
  2. Add garlic and green beans; sauté 3 minutes.
  3. Add soy sauce and broth; sauté 5 minutes longer or until green beans are crisp-tender.
