Macadamia-Crusted Mahi Mahi
Mango-Coconut Rice and Snow PeasIngredients
- ¼ cup finely chopped macadamia nuts
- ⅓ cup panko breadcrumbs
- 1 Tbsp butter, melted
- 1 small lime, grated and juiced
- 1 tsp refrigerated minced ginger (from a 4-oz tube)
- 2 (6-oz) mahi mahi fillets
- ¼ tsp salt
- ¼ tsp pepper
Instructions
- Preheat oven to 425°F; place a greased rimmed baking sheet in the oven while it preheats.
- Stir together macadamia nuts and panko in a shallow dish.
- Stir together melted butter, lime rind and juice, and ginger in a separate shallow dish.
- Sprinkle mahi mahi with salt and pepper; dip in butter mixture.
- Dredge fish in macadamia nut mixture, pressing to coat.
- Carefully place fish on preheated pan.
- Bake 8 to 10 minutes or until fish flakes with a fork.
Side Dish Ingredients
- 1 cup water
- 1 (7-oz) pkg coconut-ginger rice
- ½ cup frozen mango chunks, chopped
- 1 (6-oz) pkg microwavable snow peas
- ⅛ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Bring water to a boil in a medium saucepan; add rice.
- Cover, reduce heat, and simmer 15 minutes or until liquid is absorbed.
- Remove from heat, add mango, and let stand 5 minutes before fluffing with a fork.
- Meanwhile, microwave snow peas according to package directions; toss with salt and pepper.
