Pork Curry with Cilantro and Lime

Ingredients

  • 6 (1-inch-thick) boneless pork chops
  • 2 Tbsp avocado oil
  • 1 (14.5-oz) can fire-roasted diced tomatoes with garlic
  • 1 cup unsweetened coconut milk
  • 2 Tbsp mild curry paste
  • 3 Tbsp chopped fresh cilantro
  • 1 tsp fresh lime juice

Instructions

  1. Lightly sprinkle pork chops with salt and pepper.
  2. Heat oil in a large nonstick skillet over medium heat; add pork, in batches, if needed.
  3. Cook 5 minutes per side or until browned. Remove from skillet.
  4. Add tomatoes, coconut milk and curry paste to skillet; bring to a boil, reduce heat, and simmer.
  5. Return pork to skillet, and simmer 5 minutes or until sauce is thickened and pork is done.
  6. Sprinkle with cilantro and lime juice.

Side Dish Ingredients

  • 1 (12-oz) pkg cauliflower florets
  • 1 Tbsp avocado oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • ¼ tsp salt
  • ¼ tsp pepper
  • ½ lb broccoli, cut into small florets
  • ¼ cup organic chicken broth

Side Dish Instructions

  1. Pulse florets in a food processor until rice-like consistency.
  2. Heat oil in a large skillet over medium-high heat; add onion, and cook 5 minutes or until tender.
  3. Add garlic, salt and pepper; cook 2 minutes.
  4. Stir in cauliflower, broccoli, and broth; cover and cook 15 minutes.
