Meat Loaf Burgers with Tomato Gravy
Red Potatoes and Sweet-Spicy Cabbage Salad
Ingredients
- ½ lb lean ground beef
- 2 tsp salt-free steak seasoning
- 1 Tbsp olive oil
- 1 Tbsp all-purpose flour
- 1 (14.5-oz) can fire-roasted diced tomatoes with roasted garlic and onion
- ¼ cup low-sodium chicken broth
- ½ Tbsp Worcestershire sauce
Instructions
- Shape ground beef into 2 patties; sprinkle with steak seasoning.
- Cook patties in a skillet over medium heat until done. Remove from skillet, and keep warm; wipe skillet clean.
- Heat oil in skillet over medium heat; add flour, and cook, stirring constantly, 2 minutes.
- Stir in tomatoes and broth; cook, stirring constantly, 2 minutes or until thickened. Stir in Worcestershire.
- Return burgers to skillet; cook 1 minute or until thoroughly heated.
Side Dish Ingredients
- 10 oz small red potatoes, halved
- 1 Tbsp extra virgin olive oil
- 1 small clove garlic, minced
- ⅛ tsp salt
- ⅛ tsp pepper
- 1½ cups shredded cabbage
- ⅛ tsp crushed red pepper
- 2 Tbsp light raspberry-walnut dressing
Side Dish Instructions
- Arrange potatoes in a steamer basket over boiling water. Cover and steam 6 to 8 minutes or until tender.
- Combine potatoes, oil, garlic, salt and pepper in a bowl, tossing to coat.
- Toss together cabbage, red pepper and dressing in a bowl.
