Meat Loaf Burgers with Tomato Gravy

Red Potatoes and Sweet-Spicy Cabbage Salad

Ingredients

  • ½ lb lean ground beef
  • 2 tsp salt-free steak seasoning
  • 1 Tbsp olive oil
  • 1 Tbsp all-purpose flour
  • 1 (14.5-oz) can fire-roasted diced tomatoes with roasted garlic and onion
  • ¼ cup low-sodium chicken broth
  • ½ Tbsp Worcestershire sauce

Instructions

  1. Shape ground beef into 2 patties; sprinkle with steak seasoning.
  2. Cook patties in a skillet over medium heat until done. Remove from skillet, and keep warm; wipe skillet clean.
  3. Heat oil in skillet over medium heat; add flour, and cook, stirring constantly, 2 minutes.
  4. Stir in tomatoes and broth; cook, stirring constantly, 2 minutes or until thickened. Stir in Worcestershire.
  5. Return burgers to skillet; cook 1 minute or until thoroughly heated.

Side Dish Ingredients

  • 10 oz small red potatoes, halved
  • 1 Tbsp extra virgin olive oil
  • 1 small clove garlic, minced
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 1½ cups shredded cabbage
  • ⅛ tsp crushed red pepper
  • 2 Tbsp light raspberry-walnut dressing

Side Dish Instructions

  1. Arrange potatoes in a steamer basket over boiling water. Cover and steam 6 to 8 minutes or until tender.
  2. Combine potatoes, oil, garlic, salt and pepper in a bowl, tossing to coat.
  3. Toss together cabbage, red pepper and dressing in a bowl.
