Spicy Italian-Seasoned Chicken

Ingredients

  • 1 (8-oz) boneless, skinless chicken breast, cut in half lengthwise
  • ½ tsp Italian seasoning
  • 2 tsp extra virgin olive oil
  • ½ tsp red wine vinegar
  • Pinch of crushed red pepper
  • ⅛ tsp salt

Instructions

  1. Pound chicken to ½-inch thickness, and sprinkle both sides with Italian seasoning.
  2. Cook chicken in a nonstick skillet coated with cooking spray over medium-high heat 4 minutes per side or until done.
  3. Stir together oil, vinegar, red pepper and salt, and pour over chicken in skillet.
  4. Remove from heat, and turn chicken several times until well coated with sauce.

Side Dish Ingredients

  • 2 red bell peppers, cut in half
  • 1 yellow bell pepper, cut in half
  • 2 slices red onion (about ½-inch thick)
  • 1 Tbsp olive oil
  • ½ (8-oz) ball fresh mozzarella cheese, cubed
  • 2 Tbsp chopped fresh basil
  • 1½ tsp balsamic vinegar
  • ¼ tsp salt
  • ⅛ tsp crushed red pepper

Side Dish Instructions

  1. Preheat broiler. Place peppers and onion on a rimmed baking sheet; brush with 1½ tsp oil.
  2. Broil 10 minutes or until charred.
  3. Peel peppers, and slice.
  4. Toss together peppers, onion, cheese, 1½ tsp oil, basil, vinegar, salt, and red pepper in a bowl.
