Spicy Italian-Seasoned Chicken
Roasted Peppers with Mozzarella
Ingredients
- 1 (8-oz) boneless, skinless chicken breast, cut in half lengthwise
- ½ tsp Italian seasoning
- 2 tsp extra virgin olive oil
- ½ tsp red wine vinegar
- Pinch of crushed red pepper
- ⅛ tsp salt
Instructions
- Pound chicken to ½-inch thickness, and sprinkle both sides with Italian seasoning.
- Cook chicken in a nonstick skillet coated with cooking spray over medium-high heat 4 minutes per side or until done.
- Stir together oil, vinegar, red pepper and salt, and pour over chicken in skillet.
- Remove from heat, and turn chicken several times until well coated with sauce.
Side Dish Ingredients
- 2 red bell peppers, cut in half
- 1 yellow bell pepper, cut in half
- 2 slices red onion (about ½-inch thick)
- 1 Tbsp olive oil
- ½ (8-oz) ball fresh mozzarella cheese, cubed
- 2 Tbsp chopped fresh basil
- 1½ tsp balsamic vinegar
- ¼ tsp salt
- ⅛ tsp crushed red pepper
Side Dish Instructions
- Preheat broiler. Place peppers and onion on a rimmed baking sheet; brush with 1½ tsp oil.
- Broil 10 minutes or until charred.
- Peel peppers, and slice.
- Toss together peppers, onion, cheese, 1½ tsp oil, basil, vinegar, salt, and red pepper in a bowl.
