Apple-Stuffed Pork Tenderloin
Roasted Brussels SproutsIngredients
- 1 pork tenderloin, trimmed
- 1 Tbsp butter
- 1 crisp, red apple, chopped
- ¼ cup chopped onion
- ¼ cup chopped celery
- 2 Tbsp panko breadcrumbs
- ½ tsp dried thyme (or use 1 Tbsp chopped fresh)
- 1 Tbsp olive oil
Instructions
- Preheat oven to 400°F.
- Cut tenderloin lengthwise to within ½-inch of opposite side (not all the way through pork). Open tenderloin; place between 2 sheets of plastic wrap, and pound to ½-inch thickness using a meat mallet or rolling pin.
- Sprinkle pork lightly with salt and pepper.
- Melt butter in a large skillet over medium heat. Add apple, onion and celery; sauté 7 to 8 minutes or until tender.
- Remove from heat; stir in panko and thyme. Spread over cut sides of pork. Close tenderloin, and tie with kitchen string at 1-inch intervals.
- Heat oil in skillet over medium-high heat. Add pork, and cook 5 minutes per side or until browned. Transfer to a foil-lined rimmed baking sheet.
- Bake 10 to 15 minutes or until a meat thermometer inserted near center of meat reads 145°F.
- Let stand 10 minutes before slicing.
Side Dish Ingredients
- ¾ lb Brussels sprouts, trimmed and cut in half
- 2 Tbsp olive oil
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Preheat oven to 400°F.
- Combine Brussels sprouts, oil, salt and pepper on a rimmed baking sheet.
- Bake 20 minutes or until browned and tender.
