Four-Cheese Macaroni and Cheese

Ingredients

  • 1 (16-oz) pkg rigatoni
  • ½ cup butter
  • ½ cup all-purpose flour
  • 1 tsp pepper
  • 1 (32-oz) carton chicken broth
  • 1 (8-oz) block mozzarella cheese, shredded
  • 1 (8-oz) block Monterey Jack cheese, shredded
  • 1 (8-oz) pkg provolone cheese, shredded
  • 1 cup freshly shredded Parmesan cheese

Instructions

  1. Preheat oven to 350°F.
  2. Cook pasta according to package directions.
  3. Meanwhile, melt butter in a large deep skillet over medium heat; add flour and pepper. Cook, stirring constantly, 2 minutes.
  4. Gradually stir in broth; cook, stirring constantly, 6 to 8 minutes or until thick and bubbly.
  5. Gradually add mozzarella, Monterey Jack and provolone cheeses, stirring until melted.
  6. Stir in cooked pasta; spoon into a lightly greased 13-x 9-inch baking dish.
  7. Sprinkle with Parmesan.
  8. Bake 20 to 30 minutes or until browned and bubbly.
