Pork Chops with Wilted Slaw

Ingredients

  • 2 lb (1½-inch-thick) boneless pork chops
  • 1 Tbsp avocado oil
  • 6 slices nitrite-free bacon, chopped
  • ½ head red cabbage, thinly sliced
  • 1 (10-oz) pkg matchstick-cut carrots
  • 4 cups chopped kale
  • 1 Granny Smith apple, thinly sliced
  • 2 Tbsp apple cider vinegar
  • 1 tsp Dijon mustard

Instructions

  1. Preheat grill or grill pan to medium-high heat.
  2. Sprinkle pork chops with salt and pepper; rub with oil.
  3. Grill pork, covered, 4 to 5 minutes per side or to 145°F.
  4. Meanwhile, cook bacon in a large skillet over medium heat until crisp.
  5. Using a slotted spoon, remove bacon, and drain on paper towels.
  6. Heat drippings over medium heat. Add cabbage, carrots and kale; cook, stirring, 5 minutes.
  7. Add apple; cook, stirring, 2 minutes.
  8. Whisk together vinegar and mustard; add to cabbage mixture, tossing to coat.
  9. Season slaw with salt and pepper to taste; sprinkle with reserved bacon.
  10. Serve slaw with pork chops.
