Pork Chops with Wilted Slaw

Ingredients
- 2 lb (1½-inch-thick) boneless pork chops
- 1 Tbsp avocado oil
- 6 slices nitrite-free bacon, chopped
- ½ head red cabbage, thinly sliced
- 1 (10-oz) pkg matchstick-cut carrots
- 4 cups chopped kale
- 1 Granny Smith apple, thinly sliced
- 2 Tbsp apple cider vinegar
- 1 tsp Dijon mustard
Instructions
- Preheat grill or grill pan to medium-high heat.
- Sprinkle pork chops with salt and pepper; rub with oil.
- Grill pork, covered, 4 to 5 minutes per side or to 145°F.
- Meanwhile, cook bacon in a large skillet over medium heat until crisp.
- Using a slotted spoon, remove bacon, and drain on paper towels.
- Heat drippings over medium heat. Add cabbage, carrots and kale; cook, stirring, 5 minutes.
- Add apple; cook, stirring, 2 minutes.
- Whisk together vinegar and mustard; add to cabbage mixture, tossing to coat.
- Season slaw with salt and pepper to taste; sprinkle with reserved bacon.
- Serve slaw with pork chops.
