Tuna, Sweet Potato and Apple Hash

Ingredients

  • ¾ lb sweet potatoes, peeled and cut into 1-inch cubes
  • ½ onion, chopped
  • 1 Tbsp avocado oil
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 Tbsp ghee
  • 1 Granny Smith apple, chopped
  • 1 tsp chopped fresh thyme
  • 1 (5-oz) pkg baby spinach
  • 1 Tbsp apple cider vinegar
  • 1 (12-oz) can wild-caught Albacore tuna, drained
  • 2 large eggs

Instructions

  1. Preheat oven to 425°F.
  2. Toss together sweet potatoes, onion, oil, salt and pepper on a rimmed baking sheet; spread in a single layer.
  3. Bake 25 minutes or until potatoes are browned and tender.
  4. Meanwhile, melt ghee in a nonstick skillet over medium heat.
  5. Add apple and thyme; cook, stirring, 5 minutes or until just tender.
  6. Gradually add spinach, stirring until wilted. Add vinegar; cook 30 seconds.
  7. Toss together sweet potato mixture, apple mixture and tuna.
  8. Fry eggs in a nonstick skillet over medium heat.
  9. Top each serving of potato mixture with 1 fried egg; season to taste with salt and pepper.
