Tuna, Sweet Potato and Apple Hash
Ingredients
- ¾ lb sweet potatoes, peeled and cut into 1-inch cubes
- ½ onion, chopped
- 1 Tbsp avocado oil
- ¼ tsp salt
- ¼ tsp pepper
- 1 Tbsp ghee
- 1 Granny Smith apple, chopped
- 1 tsp chopped fresh thyme
- 1 (5-oz) pkg baby spinach
- 1 Tbsp apple cider vinegar
- 1 (12-oz) can wild-caught Albacore tuna, drained
- 2 large eggs
Instructions
- Preheat oven to 425°F.
- Toss together sweet potatoes, onion, oil, salt and pepper on a rimmed baking sheet; spread in a single layer.
- Bake 25 minutes or until potatoes are browned and tender.
- Meanwhile, melt ghee in a nonstick skillet over medium heat.
- Add apple and thyme; cook, stirring, 5 minutes or until just tender.
- Gradually add spinach, stirring until wilted. Add vinegar; cook 30 seconds.
- Toss together sweet potato mixture, apple mixture and tuna.
- Fry eggs in a nonstick skillet over medium heat.
- Top each serving of potato mixture with 1 fried egg; season to taste with salt and pepper.
