Black-Eyed Pea, Ham and Collard Green Stew

Ingredients

  • 1 Tbsp olive oil
  • ½ (8-oz) pkg diced yellow onion
  • ½ Tbsp bottled minced garlic
  • ½ lb cooked cubed low-sodium ham 
  • ½ (1-lb) pkg chopped collard greens
  • 1 (32-oz) carton low-sodium chicken broth
  • ½ cup water
  • 1 (16-oz) can black-eyed peas, rinsed and drained
  • ½ Tbsp apple cider vinegar

Instructions

  1. Heat oil in a Dutch oven over medium-high heat; add onion, garlic and ham.
  2. Cook 6 minutes or until onion is tender and ham is browned.
  3. Stir in remaining ingredients.
  4. Bring to a boil; cover, reduce heat and simmer 15 minutes or until collards are tender.
  5. Serve over rice, if desired.

Side Dish Ingredients

  • 1 (8.8-oz) pouch microwavable whole-grain brown rice
  • 2 small Roma tomatoes, sliced

Side Dish Instructions

  1. Heat rice according to package directions.
  2. Serve alongside sliced tomatoes.
