Black-Eyed Pea, Ham and Collard Green Stew
Whole Grain Rice and Sliced Tomatoes
Ingredients
- 1 Tbsp olive oil
- ½ (8-oz) pkg diced yellow onion
- ½ Tbsp bottled minced garlic
- ½ lb cooked cubed low-sodium ham
- ½ (1-lb) pkg chopped collard greens
- 1 (32-oz) carton low-sodium chicken broth
- ½ cup water
- 1 (16-oz) can black-eyed peas, rinsed and drained
- ½ Tbsp apple cider vinegar
Instructions
- Heat oil in a Dutch oven over medium-high heat; add onion, garlic and ham.
- Cook 6 minutes or until onion is tender and ham is browned.
- Stir in remaining ingredients.
- Bring to a boil; cover, reduce heat and simmer 15 minutes or until collards are tender.
- Serve over rice, if desired.
Side Dish Ingredients
- 1 (8.8-oz) pouch microwavable whole-grain brown rice
- 2 small Roma tomatoes, sliced
Side Dish Instructions
- Heat rice according to package directions.
- Serve alongside sliced tomatoes.
