Steak Soft Tacos

Ingredients

  • 1¼ lb boneless top sirloin or flank steak, cut into thin strips
  • 2 Tbsp olive oil
  • 2 cloves garlic, minced
  • 2 tsp ground cumin
  • ½ tsp salt
  • ½ tsp pepper
  • 1 large sweet onion, thinly sliced
  • 3 bell peppers (any color), thinly sliced
  • 6 soft taco-size low-carb flour tortillas
  • ¾ cup salsa
  • ¾ cup shredded reduced-fat Mexican-blend cheese (or use Cheddar)
  • 6 Tbsp reduced-fat sour cream
  • 1 large lime, cut into wedges

Instructions

  1. Toss steak with 1 Tbsp oil, garlic, cumin, salt and pepper.
  2. Sauté steak in a large nonstick skillet coated with cooking spray over medium-high heat 4 to 5 minutes or to desired doneness; remove from skillet.
  3. Add 1 Tbsp oil to drippings in skillet; add onion and bell peppers, and sauté until vegetables are tender and caramelized.
  4. Heat tortillas according to package directions.
  5. Divide beef and vegetables among tortillas; top each with 2 Tbsp salsa, 2 Tbsp cheese, and 1 Tbsp sour cream. Serve with lime wedges.

  • 4 navel oranges, peeled
  • 2 Tbsp olive oil
  • 2 Tbsp honey
  • 1 tsp grated lemon rind
  • 2 Tbsp fresh lemon juice

Side Dish Instructions

  1. Remove white pith from oranges using a paring knife.
  2. Cut oranges crosswise into ¼-inch rounds over a small bowl to collect juices.
  3. Combine orange juice, oil, honey, lemon rind, and lemon juice; add orange slices, and toss gently.
