Bang Bang Chicken
Pineapple Rice and Steamed Broccoli
Ingredients
- ½ lb boneless, skinless chicken breasts, cut into chunks
- ¼ tsp salt
- ¼ cup cornstarch
- 1 large egg
- ⅓ cup low-fat buttermilk
- ½ cup panko breadcrumbs
- 3 Tbsp olive oil mayonnaise
- 1 Tbsp sweet chili sauce
- 1 tsp honey
Instructions
- Preheat oven to 450°F; place a greased rimmed baking sheet in the oven while it preheats.
- Sprinkle chicken with salt.
- Place cornstarch in a shallow dish; whisk together egg and buttermilk in a separate shallow dish.
- Place panko in a third shallow dish.
- Dredge chicken in cornstarch, then in egg mixture, and finally in panko.
- Place on preheated baking sheet; spray chicken with cooking spray.
- Bake 15 minutes or until browned and crisp.
- Meanwhile, stir together mayonnaise, chili sauce and honey; drizzle sauce over chicken.
Side Dish Ingredients
- 1 (8.5-oz) pouch microwavable jasmine rice
- 1 green onion, sliced
- ¼ cup chopped pineapple
- 1 (12-oz) pkg broccoli florets
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Cook rice according to package directions; transfer to a serving bowl, and stir in green onion and pineapple.
- Cook broccoli according to package directions.
- Transfer to a serving bowl, and toss with salt and pepper.
