Pineapple Rice and Steamed Broccoli

Ingredients

  • ½ lb boneless, skinless chicken breasts, cut into chunks
  • ¼ tsp salt
  • ¼ cup cornstarch
  • 1 large egg
  • ⅓ cup low-fat buttermilk
  • ½ cup panko breadcrumbs
  • 3 Tbsp olive oil mayonnaise
  • 1 Tbsp sweet chili sauce
  • 1 tsp honey

Instructions

  1. Preheat oven to 450°F; place a greased rimmed baking sheet in the oven while it preheats.
  2. Sprinkle chicken with salt.
  3. Place cornstarch in a shallow dish; whisk together egg and buttermilk in a separate shallow dish.
  4. Place panko in a third shallow dish.
  5. Dredge chicken in cornstarch, then in egg mixture, and finally in panko.
  6. Place on preheated baking sheet; spray chicken with cooking spray.
  7. Bake 15 minutes or until browned and crisp.
  8. Meanwhile, stir together mayonnaise, chili sauce and honey; drizzle sauce over chicken.

Side Dish Ingredients

  • 1 (8.5-oz) pouch microwavable jasmine rice
  • 1 green onion, sliced
  • ¼ cup chopped pineapple
  • 1 (12-oz) pkg broccoli florets
  • ¼ tsp salt
  • ¼ tsp pepper 

Side Dish Instructions

  1. Cook rice according to package directions; transfer to a serving bowl, and stir in green onion and pineapple.
  2. Cook broccoli according to package directions.
  3. Transfer to a serving bowl, and toss with salt and pepper.
