Vanilla Chia Pudding
Berry-Walnut Sauce
Ingredients
- ⅓ cup chia seeds
- 1 (13.5-oz) can unsweetened coconut milk
- 1 Tbsp raw honey
- ½ tsp pure vanilla extract
- ⅛ tsp salt
- Berry-Walnut Sauce (recipe follows)
Instructions
- Combine chia seeds, coconut milk, honey, vanilla and salt. Cover and refrigerate overnight.
- Spoon Berry-Walnut Sauce over each serving.
Side Dish Ingredients
- 1 (12-oz) pkg frozen mixed berries
- ½ cup raw walnuts, toasted
- 3 Tbsp raw honey
- ½ tsp kosher salt
- ½ tsp pure vanilla extract
Side Dish Instructions
- Combine berries, walnuts, honey, salt and vanilla in a saucepan.
- Bring to a simmer; cook 10 minutes or until slightly thickened.
- Cover and chill in refrigerator overnight.
