Vanilla Chia Pudding

Ingredients

  • ⅓ cup chia seeds
  • 1 (13.5-oz) can unsweetened coconut milk
  • 1 Tbsp raw honey
  • ½ tsp pure vanilla extract
  • ⅛ tsp salt
  • Berry-Walnut Sauce (recipe follows)

Instructions

  1. Combine chia seeds, coconut milk, honey, vanilla and salt. Cover and refrigerate overnight.
  2. Spoon Berry-Walnut Sauce over each serving.

Side Dish Ingredients

  • 1 (12-oz) pkg frozen mixed berries
  • ½ cup raw walnuts, toasted
  • 3 Tbsp raw honey
  • ½ tsp kosher salt
  • ½ tsp pure vanilla extract

Side Dish Instructions

  1. Combine berries, walnuts, honey, salt and vanilla in a saucepan.
  2. Bring to a simmer; cook 10 minutes or until slightly thickened.
  3. Cover and chill in refrigerator overnight.
