Arugula and Apple Salad with Tuna

Ingredients

  • 1 cup fresh parsley leaves
  • ½ cup thinly sliced red onion
  • ¼ cup fresh basil leaves
  • 2 (5-oz) pkg arugula
  • 4 (5-oz) cans wild-caught albacore tuna, drained
  • 2 apples, sliced
  • ¼ cup fresh lemon juice
  • 2 tsp raw honey
  • ¼ cup extra virgin olive oil

Instructions

  1. Place parsley, onion, basil, and arugula in a salad bowl.
  2. Combine tuna, apples, lemon juice and honey; drizzle with oil.
  3. Add tuna mixture to salad; toss to coat. Season with salt and pepper to taste.
