Mustard-Glazed Salmon

Garlicky Pan-Roasted Broccoli and Cauliflower

Ingredients

  • 6 (4-oz) salmon fillets
  • 1 Tbsp avocado oil
  • ¼ tsp pepper
  • 2 Tbsp Dijon mustard (or grainy Dijon)
  • 1 Tbsp raw honey
  • 2 tsp dried rosemary

Instructions

  1. Preheat oven to 450°F.
  2. Place salmon, skin side down, on a foil-lined rimmed baking sheet coated with oil; sprinkle with pepper.
  3. Stir together mustard, honey and rosemary; brush over fillets.
  4. Bake 10 to 12 minutes or until fish flakes with a fork.

Side Dish Ingredients

  • 2 Tbsp avocado oil
  • 2 (12-oz) pkg fresh broccoli and cauliflower florets
  • 1 red bell pepper, thinly sliced
  • 4 cloves garlic, minced
  • 1 tsp salt
  • 1 tsp pepper

Side Dish Instructions

  1. Heat oil in a large nonstick skillet over medium-high heat.
  2. Add broccoli and cauliflower, bell pepper, garlic, salt and pepper.
  3. Sauté 3 minutes or until browned.
  4. Cover, reduce heat, and cook 3 minutes longer or until crisp-tender.
