Cajun Beef Chili

Ingredients

  • 3 lb beef stew meat
  • 1 tsp Cajun seasoning
  • ½ tsp black pepper
  • 1 large onion, chopped
  • 1 large green bell pepper, chopped
  • 4 cloves garlic, minced
  • 1 (14.5-oz) can organic diced tomatoes
  • 1 (14.5-oz) can organic beef broth

Instructions

  1. Sprinkle beef evenly with Cajun seasoning and pepper.
  2. Combine onion, bell pepper and garlic in a 5-or 6-quart slow cooker. Place beef over vegetables.
  3. Pour tomatoes and broth over beef.
  4. Cover and cook on LOW 6 hours or until beef is done.

Side Dish Ingredients

  • 3 large sweet potatoes
  • 3 Tbsp avocado oil
  • 1 tsp salt
  • 1 tsp pepper

Side Dish Instructions

  1. Preheat oven to 400°F.
  2. Using a mandoline (or a sharp knife), thinly slice sweet potatoes.
  3. Toss together potatoes and oil on rimmed baking sheets; arrange in a single layer on pans.
  4. Sprinkle with salt and pepper.
  5. Bake 25 to 35 minutes or until edges are browned and potatoes are crisp.
  6. Cool "chips" on wire racks.
