Cajun Beef Chili
Sweet Potato Chips
Ingredients
- 3 lb beef stew meat
- 1 tsp Cajun seasoning
- ½ tsp black pepper
- 1 large onion, chopped
- 1 large green bell pepper, chopped
- 4 cloves garlic, minced
- 1 (14.5-oz) can organic diced tomatoes
- 1 (14.5-oz) can organic beef broth
Instructions
- Sprinkle beef evenly with Cajun seasoning and pepper.
- Combine onion, bell pepper and garlic in a 5-or 6-quart slow cooker. Place beef over vegetables.
- Pour tomatoes and broth over beef.
- Cover and cook on LOW 6 hours or until beef is done.
Side Dish Ingredients
- 3 large sweet potatoes
- 3 Tbsp avocado oil
- 1 tsp salt
- 1 tsp pepper
Side Dish Instructions
- Preheat oven to 400°F.
- Using a mandoline (or a sharp knife), thinly slice sweet potatoes.
- Toss together potatoes and oil on rimmed baking sheets; arrange in a single layer on pans.
- Sprinkle with salt and pepper.
- Bake 25 to 35 minutes or until edges are browned and potatoes are crisp.
- Cool "chips" on wire racks.
