Bacon Cheeseburger Chopped Salad
Rosemary Sweet Potato Wedges
Ingredients
- ½ lb lean ground beef
- ½ tsp salt
- ¼ tsp pepper
- 4 slices natural uncured bacon
- ¾ lb organic romaine lettuce
- 1 ripe avocado, pitted and chopped
- 1 organic tomato, chopped
- ½ cup chopped red onion
- ¼ cup shredded Cheddar cheese
- ¼ cup balsamic vinegar
- 2 Tbsp Dijon mustard
Instructions
- Mix ground beef, salt and pepper; shape into 2 large thin patties.
- Cook over medium heat in a nonstick skillet 5 minutes per side or until no longer pink; cool and coarsely crumble.
- Cook bacon in skillet until crisp; crumble.
- Combine lettuce, crumbled hamburger, bacon, avocado, tomato, onion and cheese; toss.
- Whisk together balsamic vinegar and mustard; drizzle over salad.
Side Dish Ingredients
- 1 large sweet potato, peeled and cut into ½-inch-thick wedges
- 1 Tbsp olive oil
- 1 tsp dried or fresh chopped rosemary
- ½ tsp garlic powder
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Preheat oven to 400°F.
- Combine sweet potato wedges and oil on a rimmed baking sheet; toss to coat.
- Sprinkle with rosemary, garlic powder, salt and pepper; toss.
- Bake 30 minutes or until tender and browned, turning once.
