Bacon Cheeseburger Chopped Salad

Ingredients

  • ½ lb lean ground beef
  • ½ tsp salt
  • ¼ tsp pepper
  • 4 slices natural uncured bacon
  • ¾ lb organic romaine lettuce
  • 1 ripe avocado, pitted and chopped
  • 1 organic tomato, chopped
  • ½ cup chopped red onion
  • ¼ cup shredded Cheddar cheese
  • ¼ cup balsamic vinegar
  • 2 Tbsp Dijon mustard

Instructions

  1. Mix ground beef, salt and pepper; shape into 2 large thin patties.
  2. Cook over medium heat in a nonstick skillet 5 minutes per side or until no longer pink; cool and coarsely crumble.
  3. Cook bacon in skillet until crisp; crumble.
  4. Combine lettuce, crumbled hamburger, bacon, avocado, tomato, onion and cheese; toss.
  5. Whisk together balsamic vinegar and mustard; drizzle over salad.

Side Dish Ingredients

  • 1 large sweet potato, peeled and cut into ½-inch-thick wedges
  • 1 Tbsp olive oil
  • 1 tsp dried or fresh chopped rosemary
  • ½ tsp garlic powder
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Preheat oven to 400°F.
  2. Combine sweet potato wedges and oil on a rimmed baking sheet; toss to coat.
  3. Sprinkle with rosemary, garlic powder, salt and pepper; toss.
  4. Bake 30 minutes or until tender and browned, turning once.
