Tomato-Basil Soup
Garlic Toast Grilled Cheese SandwichesIngredients
- 1 (28-oz) can fire-roasted crushed tomatoes
- 2 (14.5-oz) cans petite diced tomatoes
- ½ red onion, diced
- 1 (32-oz) carton chicken broth
- ½ cup heavy cream
- 3 Tbsp chopped fresh basil
Instructions
- Combine all tomatoes, onion and broth in a 5-to 7-quart slow cooker.
- Cover and cook on LOW 6 to 8 hours.
- Stir in heavy cream and basil.
- If desired, blend with an immersion blender until smooth.
- Season to taste with salt and pepper.
Side Dish Ingredients
- 1 (14-oz) loaf frozen garlic toast, thawed
- 1 (8-oz) pkg sliced mozzarella cheese
Side Dish Instructions
- Top 6 slices of garlic toast with cheese slices; cover each with 1 slice remaining toast.
- Heat a large nonstick skillet over medium heat. Add half of sandwiches, and cook 3 to 4 minutes per side or until garlic toast is browned and cheese is melted.
- Repeat procedure with remaining sandwiches.
