Mini Roast Beef-and-Cheddar Melts

Sweet Potato Puffs and Apples

Ingredients

  • 1½ Tbsp oil
  • 3 small yellow onions, thinly sliced (see Note)
  • 12 (1.25-oz) wheat slider buns
  • ¾ lb thinly sliced oven roast beef
  • 6 (0.67-oz) slices Cheddar cheese, cut in half

Instructions

  1. Preheat broiler.
  2. Heat oil in a large nonstick skillet over medium heat.
  3. Add onion; cook, stirring occasionally, 15 minutes or until deep golden brown.
  4. Remove from heat.
  5. Arrange buns, cut sides up, on a large baking sheet.
  6. Broil 2 minutes or until golden.
  7. Place equal amounts of roast beef, cheese and onions on bottom halves of buns.
  8. Return to oven, and broil 1 minute or until cheese melts.
  9. Cover with top halves of buns.

Side Dish Ingredients

  • 1 (20-oz) pkg frozen sweet potato puffs (or use sweet potato fries)
  • Ketchup
  • 3 large apples

Side Dish Instructions

  1. Bake sweet potato puffs according to package directions; serve with ketchup.
  2. Slice apples just before serving.
