Mini Roast Beef-and-Cheddar Melts
Sweet Potato Puffs and Apples
Ingredients
- 1½ Tbsp oil
- 3 small yellow onions, thinly sliced (see Note)
- 12 (1.25-oz) wheat slider buns
- ¾ lb thinly sliced oven roast beef
- 6 (0.67-oz) slices Cheddar cheese, cut in half
Instructions
- Preheat broiler.
- Heat oil in a large nonstick skillet over medium heat.
- Add onion; cook, stirring occasionally, 15 minutes or until deep golden brown.
- Remove from heat.
- Arrange buns, cut sides up, on a large baking sheet.
- Broil 2 minutes or until golden.
- Place equal amounts of roast beef, cheese and onions on bottom halves of buns.
- Return to oven, and broil 1 minute or until cheese melts.
- Cover with top halves of buns.
Side Dish Ingredients
- 1 (20-oz) pkg frozen sweet potato puffs (or use sweet potato fries)
- Ketchup
- 3 large apples
Side Dish Instructions
- Bake sweet potato puffs according to package directions; serve with ketchup.
- Slice apples just before serving.
