Sheet Pan Fajitas

Ingredients

  • 1¾ lb boneless, skinless chicken breasts, thinly sliced
  • 2 (12-oz) pkg fajita vegetable mix  (sliced bell pepper and onion)
  • 4 Roma tomatoes, cut lengthwise into wedges
  • ¼ cup olive oil
  • 3 Tbsp Mexican seasoning
  • 12 (6-inch) corn tortillas
  • 2 limes, cut into wedges

Instructions

  1. Preheat oven to 425°F.
  2. Place a large rimmed baking sheet in oven to heat while oven preheats.
  3. Toss together chicken, fajita mix, tomatoes, oil and Mexican seasoning in a large bowl.
  4. Carefully spread mixture in a single layer on preheated baking sheet.
  5. Bake 20 minutes or until chicken is done and vegetables are tender.
  6. Spoon mixture evenly into tortillas; serve with lime wedges.
