Potato-Crusted Ham-and-Cheese Quiche
Light Spring Mix Salad
Ingredients
- 2 cups frozen hash browns, thawed
- 8 oz boneless sliced ham, cubed
- 1½ cups thinly sliced zucchini
- 4 large eggs
- 1 cup milk
- 1 tsp Dijon mustard
- 1 cup shredded Cheddar cheese
Instructions
- Preheat oven to 375°F. Coat a 9-inch pie plate with cooking spray.
- Press hash browns on bottom and up sides of pie plate.
- Bake 10 minutes.
- Layer crust with ham and zucchini.
- Whisk together eggs, milk, and Dijon mustard in a bowl; pour into crust.
- Bake 30 to 35 minutes or until center is set. Sprinkle with cheese.
- Bake 5 minutes or until cheese is melted.
Side Dish Ingredients
- ¼ cup olive oil
- 3 Tbsp red wine vinegar or balsamic vinegar
- 2 tsp Dijon mustard
- 2 (5-oz) pkg spring mix
Side Dish Instructions
- Whisk together oil, vinegar, mustard, and salt and pepper to taste in a bowl until blended.
- Toss with spring mix until coated.
