Potato-Crusted Ham-and-Cheese Quiche

Ingredients

  • 2 cups frozen hash browns, thawed
  • 8 oz boneless sliced ham, cubed
  • 1½ cups thinly sliced zucchini
  • 4 large eggs
  • 1 cup milk
  • 1 tsp Dijon mustard
  • 1 cup shredded Cheddar cheese

Instructions

  1. Preheat oven to 375°F. Coat a 9-inch pie plate with cooking spray.
  2. Press hash browns on bottom and up sides of pie plate.
  3. Bake 10 minutes.
  4. Layer crust with ham and zucchini.
  5. Whisk together eggs, milk, and Dijon mustard in a bowl; pour into crust.
  6. Bake 30 to 35 minutes or until center is set. Sprinkle with cheese.
  7. Bake 5 minutes or until cheese is melted.

Side Dish Ingredients

  • ¼ cup olive oil
  • 3 Tbsp red wine vinegar or balsamic vinegar
  • 2 tsp Dijon mustard
  • 2 (5-oz) pkg spring mix

Side Dish Instructions

  1. Whisk together oil, vinegar, mustard, and salt and pepper to taste in a bowl until blended.
  2. Toss with spring mix until coated.
