Steak Soft Tacos

Ingredients
- 1¼ lb boneless top sirloin or flank steak, cut into thin strips
- 2 Tbsp olive oil
- 2 cloves garlic, minced
- 2 tsp ground cumin
- ½ tsp salt
- ½ tsp pepper
- 1 large sweet onion, thinly sliced
- 3 bell peppers (any color), thinly sliced
- 6 soft taco-size low-carb flour tortillas
- ¾ cup salsa
- ¾ cup shredded reduced-fat Mexican-blend cheese (or use Cheddar)
- 6 Tbsp reduced-fat sour cream
- 1 large lime, cut into wedges
Instructions
- Toss steak with 1 Tbsp oil, garlic, cumin, salt and pepper.
- Sauté steak in a large nonstick skillet coated with cooking spray over medium-high heat 4 to 5 minutes or to desired doneness; remove from skillet.
- Add 1 Tbsp oil to drippings in skillet; add onion and bell peppers, and sauté until vegetables are tender and caramelized.
- Heat tortillas according to package directions.
- Divide beef and vegetables among tortillas; top each with 2 Tbsp salsa, 2 Tbsp cheese, and 1 Tbsp sour cream. Serve with lime wedges.

- 4 navel oranges, peeled
- 2 Tbsp olive oil
- 2 Tbsp honey
- 1 tsp grated lemon rind
- 2 Tbsp fresh lemon juice
Side Dish Instructions
- Remove white pith from oranges using a paring knife.
- Cut oranges crosswise into ¼-inch rounds over a small bowl to collect juices.
- Combine orange juice, oil, honey, lemon rind, and lemon juice; add orange slices, and toss gently.
